Serve alongside a cup of morning coffee or afternoon tea for a perfect slice of sweetness.What you will need: 2/3 cup extra virgin olive oil2 eggs1/4 cup fresh-squeezed lemon juice1 tbsp lemon zest2 1/2 tsp fresh chopped rosemary1/2 tsp vanilla1 cup Greek-style yogurt1 1/2 cup granulated sugar3 cups flour2 tsp baking powder1/2 tsp baking soda1/2 tsp sea salt1 cup powdered sugar (for icing)1 – 2 tbsp fresh-squeezed lemon juice (for icing)Begin by preheating the oven to 350F degrees. Let the cake cool completely on a cooling rack and then prepare the icing: Whisk 1 – 2 tbsp lemon juice into 1 cup of powdered sugar, adding more juice or sugar if necessary.
